Z-Home Position?

how do i change where the z Axis gets homed? I have seen several videos that show machines home the X and Y axis to machine 0, then move to the center of the bed to home the Z axis. 
Is this just a function of the x and y offset (or would the x and y offset cause me issues)?
Or is there someplace else to tell the machine where to home the Z axis?

    In firmware tool,mechanics tab.If you select one of the homing option with the preheat,it then allows you to set the X Y  coords where it will go for homing Z, set preheat temp to 0 so it does not bother heating the nozzle.
    I also set pre raise Z=always with pre raise distance=5mm,this ensures bed clearance for the probe trigger point.
