Z speed is limited by max z speed. Rod based z axis ARE slow compared to x and y. They can't go so fast a sthey have a higher resolution and friction is higher.
Extruder watch out if relative or absolute mode and which coordinate you are at! Espcieally after it has been used sending G1 E1 can cause a back move when extrusion was already at E > 1.
